Córdoba

Córdoba

Andalusian World Heritage city, famous for the Mosque-Cathedral, the Patio Festival (UNESCO) and exceptional gastronomy: salmorejo, flamenquín and oxtail stew. One of the jewels of the Andalusi legacy in Spain.

About the City

Córdoba is one of the most emblematic cities in Spain and of the Andalusi legacy in Europe. Its Mosque-Cathedral, declared a UNESCO World Heritage Site, is a unique monument: an 8th-century Islamic mosque expanded over centuries and converted into a Christian cathedral in 1236. The bicolour horseshoe arches, reused Roman and Visigothic columns, and fusion of styles create an ensemble of extraordinary artistic richness. The historic centre, with narrow streets, flower-filled patios and the Jewish Quarter, invites you to lose yourself in centuries of history.

The Festival of the Patios of Córdoba, also UNESCO Intangible Cultural Heritage, celebrates each May the tradition of decorating interior courtyards with flowerpots, geraniums and tiles. The people of Córdoba open their homes to the public in a competition that fills the city with colour and fragrance. The Mediterranean diet, recognised by UNESCO, is strongly present in the local cuisine, with olive oil as its base.

Córdoban gastronomy is one of its main attractions. Salmorejo, a cold cream of tomato, bread and oil thicker than gazpacho, is served with ham and hard-boiled egg. Flamenquín, a breaded and fried roll of ham and pork loin, is another emblematic dish. Oxtail stew, eggplant with honey and Córdoba pastel complete a first-class gastronomic offer. Montilla-Moriles wines, especially fino and amontillado, accompany the table.

Córdoba is very well connected by high-speed rail (1h45 from Madrid, 45 min from Seville) and has a continental Mediterranean climate: mild winters and very hot summers. Spring and autumn are the best times to visit. Avoid midday in July and August. It is a safe, welcoming city, perfect for lovers of art, history and good food.
