Spanning eight decades in the business, Lázaro reminisces, “I’ve been a tavern owner since the ’40s. Starting at 10, I was already immersed in the world of tabernas.” Born in Adrada de Haza, Burgos, in 1929, his love for the tavern is palpable. Casa Amadeo, founded in 1942, is known for its welcoming warmth, the kind where upon entering, you’re certain of a sumptuous meal awaiting.

While locals often flock for their snail delicacies, tourists sometimes arrive hesitant. “The Madrileños demand snails without a second thought. Tourists, however, sometimes need a nudge, and that’s where we come in,” chuckles Lázaro. Sourced from eco-friendly farms in Arenas de San Pedro and Cadalso de los Vidrios, the taberna dishes out over a ton of these mollusks every month. “On the continent, snails are cherished. They’re loved in Italy, France, and even more so in Spain,” Lázaro comments.

Beyond snails, the menu boasts a diverse array of traditional dishes – from the iconic Burgos black pudding to torreznos, calamari, and cod fritters. Lázaro’s passion for his craft and his establishment resonates as he speaks of the essence of tabernas. “A tavern is everyone’s home. It’s where we learn from one another. While technology has distanced us, I dream of the day the tavern culture sees a renaissance.”

The art of devouring these snails, according to Lázaro, requires finesse. “Savor them. Let them roll in your mouth, and savor them like a tender kiss,” he advises. In his eyes, the success of a tavern isn’t just about the food but the human touch. “Being kind, approachable, and respectful is essential. My greatest joy is my customers’ satisfaction.”

His life mantra? It’s all about the sauce. “The best thing about cooking? The sauce. About life? It’s also the sauce. And love? Again, the sauce,” he jests, alluding to the rich snail sauce he’s renowned for. Today, his children and grandchildren keep the taberna’s flame alive, with Lázaro contributing with his 81 years of tavern experience.

While Lázaro’s undying love for snails is evident, it’s the words of a septuagenarian neighbor that capture it best: “The best snails in Madrid? Right here, the unforgettable snails of Cascorro.” It’s these gestures that bring pure joy to Lázaro.
